When delivering a session to a group, I do try to approach them on a level which they are comfortable with. I give them a lot of information about myself, my career and even what I was like at school. I always highlight the fact that I did not like school (fact). I was never very academic. This may even be evident with my writing style. I did not really start to enjoy studying until my mid 30’s, when I decided to train to be a teacher in cookery. My foray into teaching was short lived, due to bureaucracy of the education system, coupled with the fact that I the teaching experience did not match up to my expectations. The process of learning to teach did make me realise my strengths as a person and what I was able offer as a teacher.
On my return to working as a professional chef and launching www.knifeofbrian.co.uk I try to keep my teaching role by offering pop-up sessions in schools. Also by offering work experience for catering students with me at The Greyhound Pub.
