The sisters' gift

Last night I was cooking at a private dinner party. I had been asked to prepare and cook Lobster for a family at their home out on the edge of Ipswich. It's not a great time of year for lobster as we are still on Canadian. Local ones should be with us within the next month. These, in the picture below, were at the smaller end of the scale. At approximately 500g each, they were young and tender. 
It's always interesting to see how people react to lobster. Sometimes, once people realise that they are alive, before they are dead, they get unsettled. Yes, as silly as that sounds, I have heard it said! 
On this occasion there was no such problem. The guests wanted to be actively involved. Even posing for a photo opportunity with the first crustacean into the pot.
The menu was kept simple. No Thermidor sauce, just a lemon and herb butter. This was done to allow the guests to be able to taste and appreciate the flavour. It was the first time for them and I didn't want to mask or hide the natural sweetness of the shellfish. 
The meal had been paired with a Chablis and also a white Rioja. Then finished with one of my fresh fruit tarts.
